Ingredients:

  • 1 1/2 oz (45 ml) gin
  • 1/2 oz (15 mL) fresh lemon juice
  • 1/2 oz (15 mL) simple syrup (equal parts sugar and water, heated until sugar dissolves)
  • 4-6 ounces (120-180 ml) champagne or sparkling wine
  • sliced lemon for garnish
  • ice cubes

Instructions:

  1. In a cocktail shaker filled with ice, pour 1 1/2 ounces gin, 1/2 ounce fresh lemon juice and 1/2 ounce simple syrup.
  2. Cover the shaker and shake all ingredients vigorously until well mixed and chilled.
  3. Fill a tall glass with ice.
  4. Strain the mixture from the shaker into the glass filled with ice.
  5. Fill the glass with 4-6 ounces of champagne or sparkling wine, making sure it is filled to the brim.
  6. Garnish with a slice of lemon and serve immediately.

This drink should be consumed quickly as champagne or sparkling wine will deglaze over time. Enjoy!
