Tom Collins Cocktail

Ingredients:

  • 2 oz (60 ml) gin
  • 1/2 oz (15 mL) fresh lemon juice
  • 1/2 oz (15 mL) simple syrup (equal parts sugar and water, heated until sugar dissolves)
  • 4-6 ounces (120-180 mL) sparkling water
  • sliced lemon or lime
  • ice cubes

Instructions:

  1. In a cocktail shaker filled with ice, pour 2 ounces gin, 1/2 ounce fresh lemon juice and 1/2 ounce simple syrup.
  2. Cover shaker and shake all ingredients vigorously until well blended and chilled.
  3. Fill a tall glass with ice.
  4. Strain the mixture from the shaker into the glass filled with ice.
  5. Fill the glass with sparkling water, making sure it is filled to the brim.
  6. Garnish with a slice of lemon or lime and serve immediately.

This cocktail should be consumed quickly as the sparkling water will degas over time. Enjoy!
